Mini Salsa Meatloaves
mini salsa meatloavesIngredients
1 egg
1/3 cup quick cooking oats
½ cup plus 2 tablespoon chipotle salsa (or any salsa)
4 tablespoons ketchup divided
1 lb lean ground beef

Directions: Preheat oven to 350 degrees. In large bowl, whisk eggs. Stir in oats, ½ cup salsa and 2 tablespoons ketchup. Add beef and mix well. Spray mini loaf pan with cooking spray and bake for 30 minutes. Combine remaining 2 tablespoons salsa and ketchup and spread on top. Pair with a baked potato and steamed veggies.
