easy on your waist eggnogLove eggnog but dislike the guilt you feel for drinking it? Here is a recipe to take away that guilt so you can indulge in this treat:

2 cups nonfat milk
2 large strips orange or lemon zest
1 tsp vanilla extract or seeds of 1 vanilla bean
3 large eggs
⅓ cup splenda
1 tsp cornstarch

Combine 1 ½ cup milk, zest, and vanilla in a saucepan. Bring to simmer over medium heat. While heating milk mixture, whisk eggs, sugar, and cornstarch in separate bowl.

Gradually pour hot milk mixture into egg mixture while whisking constantly. Place this over medium heat and stir constantly with wooden spoon in figure-eight motion until eggnog begins to thicken, approximately 8 minutes. Remove from heat and stir in remaining ½ cup milk to stop cooking.

Transfer eggnog to bowl and place in larger bowl of ice to rapidly cool. Chill until ready to serve.
